Uses

In chocolate making: it is dispersed in cocoa butter. In pastry making: together with the pastry cream to create coffee bignole; coffee cream; in ganache. In ice cream parlors: on a white base, I use 80-100g per kg. In restaurants: tajarin with micronized coffee plus wild boar sauce or pan-fried egg plus coffee
